Parmesan Omelet

I probably make this recipe once a week. It requires minimal ingredients and fits in with a low carb diet. I  was first inspired to make this recipe when I came across this video: https://www.youtube.com/watch?v=1M1RB2wDVLA

The recipe consists of a fluffy tender omelet embedded with a crispy Parmesan crisp. If you use a non-stick pan, the omelet will just slide off.

Ingredients

  • 2 Eggs
  • Black Pepper
  • 1 Ounces Parmesan Cheese (Grate it yourself)
  • 2 Tablespoons of Milk
  1. Warm a large pan on medium high heat and grate the cheese directly on the pan. I like to also add garlic powder at this point.Inital cheese
  2. While the cheese is browning, whisk the eggs with pepper and whatever seasoning you want. Since the Parmesan cheese is already pretty salty, I would not recommend adding any extra salt. egg mixture
  3. Once the cheese turns golden brown, pour the eggs directly into the pan. Cover the pan if you have a lid that fits well. When the edges are well set, loosen the edges with a thin plastic spatula.
  4. Roll the omelet off the pan by loosing one side and tilting the pan at a 45 degree angle. The omelet will roll into itself . Rotate some more until the omelet falls onto the serving plate.
