I probably make this recipe once a week. It requires minimal ingredients and fits in with a low carb diet. I was first inspired to make this recipe when I came across this video: https://www.youtube.com/watch?v=1M1RB2wDVLA
The recipe consists of a fluffy tender omelet embedded with a crispy Parmesan crisp. If you use a non-stick pan, the omelet will just slide off.
Ingredients
- 2 Eggs
- Black Pepper
- 1 Ounces Parmesan Cheese (Grate it yourself)
- 2 Tablespoons of Milk
- Warm a large pan on medium high heat and grate the cheese directly on the pan. I like to also add garlic powder at this point.

- While the cheese is browning, whisk the eggs with pepper and whatever seasoning you want. Since the Parmesan cheese is already pretty salty, I would not recommend adding any extra salt.

- Once the cheese turns golden brown, pour the eggs directly into the pan. Cover the pan if you have a lid that fits well. When the edges are well set, loosen the edges with a thin plastic spatula.
- Roll the omelet off the pan by loosing one side and tilting the pan at a 45 degree angle. The omelet will roll into itself . Rotate some more until the omelet falls onto the serving plate.
